The interest on vitamin E is growing as vitamin E not only functions as an antioxidant in food systems, but it has also been linked to human health. Recent research results suggest that vitamin E, as a free radical scavenger, may play an important role in the protection against free radical-mediated degenerative diseases such as cardio-vascular diseases, cancer, cataract and diabetes.
